These Zucchini fritters are easy and a huge hit at my house. So much so that they disappear as fast as I can make them. If you’re looking for a delicious, crispy, low-carb snack, this is going to be a good one!
Zucchini Fritters are one of my favorite snacks to make. You only need 2-3 shredded zucchini and a handful of ingredients for a delicious snack or appetizer.
Ingredients:
- 2-3 medium/large zucchini – the main ingredients to this dish and fresh produce is best.
- teaspoon salt – gives this dish a little added flavor and helps pull the water from the zucchini.
- large egg – helps to hold the fritters together while cooking.
- All purpose flour – another ingredient that helps hold the fritters together.
- garlic powder
- onion powder
- tsp smoked paprika
- ground black pepper
You can always opt for different seasonings that suit your taste buds, but I find this is the perfect blend of seasonings for my fritters.
I like to use a box grater to shred my zucchini but you can use a handheld cheese grater or something easy you like a food processor if you have that on hand.
How to Make Zucchini Fritters in the Air Fryer
Step 1
Take a grater and shred 2 or 3 medium zucchini.
Step 2
Add salt to the grated zucchini and mix. Let the mixture sit for 10 minutes and then drain out all the water and excess liquid out of the fresh zucchini with a strong paper towel or clean kitchen towel.
Step 3
Preheat air fryer to 360 degrees Fahrenheit. Prepare the air fryer basket with nonstick spray or parchment paper if needed.
Step 4
Whisk the egg.
Step 5
In a medium mixing bowl, add the whisked egg, flour, and spices to the shredded zucchini. Mix well.
Step 6
Use an ice cream scoop to scoop 2 tbsp of the zucchini fritter batter and place into the bottom of the prepared air fryer basket. You should be able to make 5 fritters, leaving room in between each one.
Step 7
Spray the tops of each fritter with cooking spray for a crispier fritter. I prefer to use olive oil spray.
Step 8
Air fry the zucchini fritters for about 12 minutes, or until golden brown and crispy.
Step 9
Carefully remove and serve with your favorite dipping sauce.

Notes
This recipe was made using a Cosori 5.8qt Air Fryer. If you are using a different brand of air fryer, you may need to play with the cook times by adding or taking away a minute or two.
No one wants their zucchini fritters soggy, so make sure you are also squeezing out as much of the liquid from zucchini as possible with a strong paper towel or cheese cloth.
The skin of the zucchini has extra vitamins and nutrients and also gives the fritters a bit of added color. I typically will skin one of the zucchini and leave the other with the skin on.
