Air Fryer Asparagus Puff Pastry Bundles

Move over, bacon-wrapped asparagus! These air fryer asparagus puff pastry bundles are a fun and delicious way to enjoy your veggies. The pastry is crispy and golden brown, and the asparagus is perfectly tender. Plus, they’re easy to make – just wrap the asparagus in pastry, brush with a little egg wash, and bake!   • 1 sheet puff pastry, thawed
  • 1 tablespoon olive oil
  • 18 asparagus spears, 3 per bundle
  • 1 cup Mozzarella Cheese, 2 to 3 tablespoons butter bundle
  • 1 large egg
  • 1/4 cup Romano Parmesan, 2 teaspoons per bundle
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Roll out the puff pastry sheet into a rectangle about twice its size. Cut the puff pastry into 6 equal pieces, using a pizza cutter or a sharp knife. Lightly drizzle olive oil over the asparagus and salt and pepper to taste.
  2. Place the asparagus spears diagonally across the center of each cut piece of pastry and top each one with 2 to 3 tablespoons of grated mozzarella cheese.
  3. Fold free edges over the filling, forming a bundle. In a small bowl, beat the egg well to make an egg wash. Brush the tops of each bundle with egg wash and sprinkle with the Romano Parmesan cheese.
  4. Place the bundles into the air fryer basket and cook in the air fryer at 370 degrees F, air fryer setting for 6-7 minutes, or until the pastry is golden brown.
  5. Plate, serve, and enjoy!
