Air Fryer Cheesy Bacon Potatoes

Fluffy on the inside and crispy on the outside- These Air Fryer Bacon Cheddar Potato Cakes are loaded with cheesy bacon flavor

Ingredients

  • 2 ½ Cups Mashed Potatoes
  • 1 Cup Cheddar Cheese
  • 2 Eggs
  • ½ Cup Flour
  • 1 teaspoon Garlic Powder
  • ¼ Cup Bacon Bits
  • 3 Spring Onions
  • 1 Jalapeno Optional

Instructions

  1. Beat Eggs
  2. Mix together Mashed Potatoes, Cheddar Cheese, Eggs, Flour, Garlic Powder, Bacon Bits, ½ of the Spring Onions and Jalapeño
  3. Make Potato Cakes. Take about ¼ Cup of the mixture and form into a small round patty about ½ inch thick.
  4. Place in air fryer on top of parchment paper. We sprayed the top of the parchment paper so it was easy to flip the potato cakes. Spray the top of the potato cakes with butter spray. This helps brown the potatoes
  5. Bake in Air Fryer for 8 minutes at 375 degrees
  6. Flip and spray the potatoes with butter spray. Cook for additional 4 minutes at 375 degrees
  7. Enjoy!!!!
