My version of chicken tacos were a huge hit with my family. I always make sure everyone is out of the kitchen. That way I can have my music going and keep the process flowing.
2 shredded chicken breasts (I use Costco Rotisserie chicken)
4 cups very hot vegetable oil ready to fry
1 dozen warm corn tortillas
-Get a warm tortilla,
-stuff with shredded chicken in the center and fold in half.
-gently place it in hot oil being careful not to splash it on yourself.
-I used toothpicks on the first few but then I realized the oil is so hot I didn’t need to continue using them at all.
– Fry the tacos on one side then flip them.
