This flavorful Air Fryer Chicken Bites and Broccoli recipe is so easy to make and can be ready in just about 30 minutes! Small pieces of tender chicken are coated in a delicious sweet and savory sauce. The chicken with broccoli florets is then cooked to perfection in an air fryer. Serve over rice with a sprinkle of fresh parsley for an amazing meal!

Ingredients needed

This healthy and easy chicken and broccoli recipe only requires a handful of simple ingredients. Much of what you need for the marinade you probably already have in the pantry, like balsamic vinegar, maple syrup, seasonings, and spices. Here’s everything you’ll need:

  • Chicken: This chicken bites recipe uses boneless skinless chicken breasts cut into bite-sized pieces. You may also skinless and boneless chicken thighs.
  • Broccoli: Wash and chop fresh broccoli florets into small pieces.
  • Olive oil: For cooking the broccoli.
  • Salt & pepper: To season the broccoli. Add more as needed, once you taste the finished dish.
  • Marinade: The marinade is a simple, yet delicious combination of olive oil, balsamic vinegar, maple syrup, Italian seasoning, onion powder, garlic powder, smoked paprika, salt and pepper.

How to make this recipe

Chunks of Chicken breast and broccoli enveloped in a flavorful marinade, and cooked in an air fryer is such an easy dinner to make. Here’s the simple method:

  1. Marinate the chicken: Combine all the marinade ingredients in a bowl. Cut the chicken into 1-inch pieces on a cutting board and transfer to the bowl with the marinade, stirring to coat each piece. Allow it to marinate for 15 minutes on the counter or up to 1 hour in the fridge.
  2. Prep the broccoli: Meanwhile, prepare the broccoli florets and rub with 1 tablespoon of oil, salt and pepper.
  3. Cook the chicken: Preheat the air fryer to 380ºF. Add the chicken to the air fryer basket in a single layer and air fry for about 10-12 minutes, or until no longer pink and almost cooked through.
  4. Cook the broccoli: Shake the basket and add in the broccoli. Continue to air fry for 6-8 minutes, or until the chicken is cooked through.
  5. Serve: Enjoy with cooked rice and garnish with chopped parsley or chili pepper flakes, if desired.

Ingredients

Notes

  • Storing leftovers: Store chicken and broccoli in an airtight container, in the fridge, for up to 4 days.
  • To reheat: For best results, warm up the chicken and broccoli in the air fryer for a couple of minutes or on the stove over medium heat, stirring frequently until warmed through. You can also microwave servings in 30-second intervals, stirring in between each one.5 minutes minutes
