Air Fryer Egg Bites

This recipe for egg bites is a quick and easy way to make a hand-held breakfast that can be stored in the refrigerator and enjoyed all week long.

Ingredients

  • 6 eggs
  • ¼ cup mozzarella cheese shredded
  • ¼ cup ham diced
  • ¼ cup vegetables diced (peppers, onion, mushrooms)
  • salt & pepper to taste
  • 2 teaspoons parsley

Instructions

  1. Preheat the air fryer to 350°F.
  2. Spray the silicone egg mold with the cooking spray.
  3. Whisk the eggs in a measuring cup and stir in the remaining ingredients.
  4. Pour the egg mixture into the silicone molds until they are about 90% full.
  5. Put them in the air fryer and cook for 11-13 minutes. Remove from the air fryer and stir the mixture after 7 minutes and continue cooking.
  6. Test with a toothpick if it comes out clean they are done, if not cook for another 1-2 minutes.

Notes

  • Preheat the air fryer.
  • Stir egg bites once, halfway through cooking.
  • Adjust the cook time according to the instructions in your air fryer user manual.
