INGREDIENTS
2 pound pork shoulder roast butt
1 tsp salt
½ tsp pepper
½ tsp garlic powder
1½ cups beef broth
2 tbsp Montreal Steak Seasoning
½ pound baby potatoes
½ pound baby carrots
2 tbsp olive oil
½ tsp seasoning salt
½ tsp pepper
INSTRUCTIONS
Rub the pork roast with 1 tsp of salt, ½ tsp of pepper, ½ tsp of garlic powder and 2 tablespoons of Montreal Steak Seasoning. Make sure to cover all sides.
Make a large foil pouch inside your air fryer and place the seasoned roast inside it. Pour the broth into the foil pan with the roast.
Set it to bake at 400 degrees for 20 minutes. While this is cooking, prepare the potatoes and carrots.
Slice the baby carrots and baby potatoes into halves. Place them in a large bowl. Sprinkle on the 2 Tablespoon olive oil, ½ teaspoon seasoning salt, and ½ teaspoon pepper. Toss this all together well.
When the first cook time is over for the pork roast, open the air fryer and flip the roast over.
Add the vegetables all around it.
Put the basket back into the air fryer, set the temperature for 350 degrees and cook for another 35 minutes.
Check the temperature of the meat. It is safe to eat at 145 degrees. If it is not at this temperature, return it to the airfryer, cooking for 5 minutes at time at 350 degrees.
Check the tenderness of the vegetables. If the roast is cooked but the vegetables are not, remove the roast and place it on a cutting board, covering it with tin foil and allow it to rest. (We want it to rest for at least 10 minutes before cutting it.)
Continue to cook the vegetables at 5 minute intervals (at 350 degrees) until they are the desired tenderness.
