Ingredients
2 ½ cup mashed potatoes (leftover works perfectly)
2 tablespoons all-purpose flour (gluten-free or regular)
2-3 green onions (diced)
1 egg
Salt and Pepper to taste
1 cup cheddar cheese (optional)
2 strips cooked bacon (optional)
Instructions
Take mashed leftover potatoes and add flour, diced green onions, egg, salt, and pepper and mix well.
If you like to add cheese and bacon you can add them at this moment and mix them well.
Preheat your air fryer at 200C/390F for 2-3 minutes.
Use a large spoon to scoop out the mixture and make it into a patty form.
Flatten the ball to ½ inch thick and place it in the freezer for 8-10 minutes to hold form. (if using fresh mashed potatoes)
After that place the potato patty into the air fryer basket and cook at 200C/390F for 7 minutes on each side.
Remove the air fryer potato pancakes and serve them with your desired toppings and dips.
