Here are the simple ingredients for making potato wedges in an air fryer. You probably have most, if not all, of them on hand already!

Best Potatoes for Wedges

To choose the best potatoes for potato wedges, make sure to pick a potato with a high starch content. I recommend russet potatoes or Yukon gold, which will air fry your wedges into a fluffy, mashed potato-like interior and leave you with crispy edges.

How to Make Potato Wedges in the Air Fryer

1. Wash and scrub potatoes until clean. Then, slice into wedges.

2. Toss with seasonings & oil: add uncooked wedges into a mixing bowl and coat with oil and seasonings. Toss until well coated.

3. Air Fry in a single layer: Working in batches, add a single, spaced-out layer of wedges into your air fryer basket. Cook for 10-12 minutes, or until crispy.

4. Repeat, then Heat all: once all wedges are done, add them all back into the basket for a final heating.

5. Season & Enjoy: Season with salt and pepper to taste, or use my seasonings suggestions below. Serve with dips and enjoy!

Ingredients

Scale
  • 2 medium russet potatoes
  • 1 ½ tablespoons olive oil
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried parsley flakes
  • ¼ teaspoon chili powder
  • ½ teaspoon salt or seasoning salt for a kick
  • Black pepper to taste

Optional Toppings

  • Fresh parsley, chopped
  • Parmesan
  • Cajun seasoning for extra spice
  • Garlic salt for Garlic Lovers

Instructions

  1. Wash and scrub clean potatoes. Slice in half, then place the flat half onto the cutting board. Cut into wedges lengthwise. Repeat for the other half. (see Optional Soaking in Notes)
  2. Toss wedges into a mixing bowl with olive oil, paprika, garlic powder, parsley, chili powder, salt or seasoning salt, and black pepper. Mix until very well coated.
  3. Preheat the air fryer to 400°F. Working in batches, add a single layer of spaced-out wedges to the air fryer. Bake for 10-12 minutes until crispy. No need to flip.
  4. Once all batches are complete, toss all potato wedges into the air fryer to re-heat for 2 minutes. Immediately sprinkle with salt and pepper to taste.
  5. You can stir and fold in optional toppings. Serve with dipping sauces and enjoy!
  6. Goes well with onion ring sauce, garlic aioli, and chipotle aioli.
