This quick and easy 30-minute recipe for roasted potatoes and mushrooms is absolutely delicious! It’s perfectly seasoned potatoes and savory mushrooms cooked together in the air fryer. It’s a fantastic side that goes with everything from eggs at breakfast to a big steak dinner! You are going to love making potatoes with mushrooms in the air fryer!

A yummy potato side dish just makes any meal better! But when you throw in some savory mushrooms it’s next-level good! And this simple recipe does just that. I already knew that the air fryer flawlessly browned potatoes and was a pro at cooking mushrooms until perfectly tender. So I thought let’s merge the 2 ingredients and make an amazing side dish that can go with any meal from breakfast to lunch or dinner.

It’s a simple 30-minute recipe that takes very little effort and is easy to customize. You can use any seasonings you like and as much or little oil as you prefer. The most important part is the cooking time and temperature. If you just follow those instructions, no matter how you season this dish it will come out wonderfully every time!

How to cook mushrooms and potatoes in the air fryer

Cooking potatoes with mushrooms in the air fryer is really simple and only requires a few basic ingredients. This is what you will need:

  • 3 Potatoes
  • 8 ounces Mushrooms
  • Olive Oil
  • Garlic Powder
  • Salt
  • Pepper

However, this recipe is easy to make your own. You can use any herbs or seasonings and be as creative as you like.

How to Store Roasted Potatoes And Mushrooms

Leftover air fryer potatoes and mushrooms will keep in the fridge for up to one week when stored in a covered container. But I don’t suggest freezing this dish because potatoes can get waterlogged and turn to mush. You can try it, but it doesn’t always work so well. Yet, if you do freeze the dish just make sure it’s in a sealed freezer bag and it will keep for about 3 months.

How to Reheat Potatoes And Mushrooms

To reheat, simply put the leftovers in the microwave for about 3 minutes on medium power or in the oven at 350 degrees Fahrenheit for about 10 minutes. If reheating from frozen, I suggest putting the potatoes and mushrooms on a baking sheet in the oven at 350 degrees Fahrenheit. The time will vary depending on the portion size you are reheating, but will be around 20 minutes.

What to Serve with Air Fried Potatoes And Mushrooms

This versatile side can be paired with almost anything from eggs to meat. I sometimes even just top it with some beans and parmesan cheese for a quick and tasty vegetarian meal. The options are endless. These are just a few of my favorites to serve this dish with.

Ingredients

Scale
  • 3 Potatoes
  • 8 ounces Mushrooms
  • 1 Tbsp Olive Oil
  • Salt
  • Black Pepper
  • Garlic Powder

Instructions

  1. Wash the potatoes and then cut them into large chunks. You can peel the potatoes or leave the peel on. It’s totally up to you. Then put them into a large bowl.
  2. Drizzle the olive oil over the potatoes and then sprinkle them with the salt, black pepper, and garlic powder to season. You can use as much or as little oil as you like. Now, toss the potatoes together with the oil and seasonings until evenly coated.
  3. Put the potatoes into the air fryer basket. Set temperature to 400°F and time to 25 minutes.
  4. While the potatoes are cooking, chop the mushrooms into pieces. Next, sprinkle them with salt, black pepper, and garlic powder. Then set them aside.
  5. After the potatoes have cooked for 15 minutes, take out the air fryer basket and flip them using a spatula. Then add the mushrooms and just leave them on top of the potatoes.
  6. Return the basket to the air fryer and let it finish cooking.
  7. When done, transfer the potatoes and mushrooms to a serving dish and enjoy
