Air Fryer Reuben Sandwich is a crispy, cheesy, savory twist on one of the most beloved deli sandwiches. Traditionally made with rye bread, corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing, the Reuben becomes even easier to prepare in the air fryer. The hot circulating air creates beautifully toasted bread while melting the cheese and warming the filling to perfection.
This sandwich is ideal for a quick lunch, an easy weeknight dinner, game day, or whenever you’re craving a hearty deli-style meal without leaving home. The air fryer gives the bread an irresistible crunch while keeping the inside warm, gooey, and flavorful.
The contrast between crispy rye bread, tender corned beef, creamy dressing, tangy sauerkraut, and melted Swiss cheese makes every bite satisfying. Once you learn how to make an Air Fryer Reuben Sandwich, you may never want to prepare this classic sandwich any other way.

Why These Ingredients Work
Rye bread provides the traditional slightly earthy flavor and sturdy structure needed to hold the rich filling. Corned beef brings savory, salty flavor and a tender texture, while Swiss cheese melts beautifully and adds a mild nutty taste. Sauerkraut provides acidity and tang, which balances the richness of the meat, cheese, and butter. Thousand Island dressing adds creaminess, sweetness, and a subtle tang that brings everything together.
Butter is especially important when using the air fryer because it helps the outside of the bread become golden and crisp. A light coating is enough to create a delicious toasted finish without making the sandwich greasy.
How To Air Fryer Reuben Sandwich
Step 1: Prepare the Sauerkraut
Place the sauerkraut in a fine-mesh strainer and press gently with the back of a spoon to remove excess liquid. You can also place it between paper towels and gently pat it dry.
This step is important because excess moisture can make the rye bread soggy during cooking.
For even better flavor, place the sauerkraut in a small skillet over medium heat and cook for 2 to 3 minutes. This removes additional moisture and slightly deepens its flavor.
Step 2: Prepare the Bread
Place the eight slices of rye bread on a clean work surface.
Spread softened butter evenly over one side of each slice. Make sure the butter reaches close to the edges without applying an excessively thick layer.
If desired, mix a small amount of garlic powder, black pepper, or smoked paprika into the butter for an extra flavorful crust.
Step 3: Prepare the Sandwich Filling
Spread Thousand Island dressing over the unbuttered side of four slices of rye bread.
Use approximately 1 tablespoon per slice, adjusting according to your preference.
Add a layer of Swiss cheese over the dressing.
Place a generous portion of thinly sliced corned beef over the cheese.
Add the drained sauerkraut.
Finish with another slice of Swiss cheese if you want an especially cheesy sandwich.
Place another slice of rye bread on top with the buttered side facing outward.
Step 4: Preheat the Air Fryer
Preheat your air fryer to:
375°F (190°C)
for approximately 3 to 5 minutes.
Preheating helps the bread begin crisping immediately and encourages the cheese to melt evenly.
Air fryer models vary, so the exact temperature may need to be adjusted slightly depending on the appliance.
Step 5: Place the Sandwiches in the Basket
Carefully place the Reuben sandwiches in the air fryer basket.
Arrange them in a single layer.
Do not overcrowd the basket. If your air fryer is small, cook the sandwiches in batches.
For sandwiches that tend to shift during cooking, you can place a small air-fryer-safe rack or trivet over them to help hold the bread in position. Make sure the accessory is designed for your appliance and does not interfere with airflow.
Step 6: Air Fry the First Side
Cook the sandwiches at 375°F for approximately:
4 to 5 minutes
Check the bread after 4 minutes.
The bottom should be golden brown and crisp.
Step 7: Flip the Sandwiches
Carefully flip each sandwich using a wide spatula or silicone-tipped tongs.
Cook for another:
3 to 5 minutes
The second side should become golden and crisp while the Swiss cheese melts completely.
Step 8: Check the Cheese
Open one sandwich carefully and check the center.
The cheese should be melted and the corned beef should be hot.
If the bread is already browned but the cheese needs more time, reduce the temperature slightly and cook for another 1 to 2 minutes.
Step 9: Rest the Sandwiches
Transfer the finished sandwiches to a cutting board.
Let them rest for approximately:
2 minutes
This brief resting period allows the melted cheese to settle and makes the sandwiches easier to slice.
Step 10: Slice and Serve
Cut each Reuben diagonally.
Serve immediately with dill pickle spears, potato chips, French fries, or coleslaw.
For an extra creamy finish, serve additional Thousand Island dressing on the side.
You Must Know
Drain the Sauerkraut Well
This is one of the most important steps when making a Reuben in the air fryer. Wet sauerkraut releases moisture into the bread, making the sandwich soft instead of crispy. Press or pat the sauerkraut dry before assembling the sandwiches.
Use Thinly Sliced Corned Beef
Thinly sliced corned beef creates the classic deli-style texture and warms quickly. Thick pieces can make the sandwich difficult to bite and may prevent the cheese from melting evenly.
Don’t Overfill the Sandwich
It can be tempting to add a huge amount of corned beef and sauerkraut, but an overfilled sandwich is harder to cook and flip. A balanced amount of each ingredient produces a better texture and keeps the sandwich together.
Choose Sturdy Bread
Seeded rye, marble rye, or traditional deli rye are excellent choices. Very soft sandwich bread can become fragile when loaded with moist ingredients.
Don’t Use Too Much Dressing
Thousand Island dressing provides important flavor, but too much can make the inside of the sandwich excessively wet. Start with a moderate amount and add extra dressing for dipping.
Preheating Helps
A preheated air fryer creates better browning and reduces the chance of the bread becoming dry before the cheese melts.
Watch the Final Minutes
Bread can go from golden brown to overly dark surprisingly quickly in an air fryer. Begin checking the sandwiches during the final few minutes.
Air Fryers Cook Differently
Some air fryers circulate air more aggressively than others. If your sandwich browns quickly, reduce the temperature to 350°F. If it takes too long to crisp, increase it slightly.
Rest Before Cutting
A short resting period keeps the cheese from immediately spilling out when you cut the sandwich.
Serve Fresh
The Reuben has the best texture immediately after air frying. The bread is crisp, the cheese is melted, and the filling is warm.
Topping Variations
Classic Extra-Cheesy Reuben
For a richer version, add an additional slice of Swiss cheese to each sandwich. You can also combine Swiss with Gruyère for an even more flavorful melted cheese layer.
Spicy Reuben
Add thinly sliced jalapeños or banana peppers to the sauerkraut. You can also mix hot sauce into the Thousand Island dressing for a spicy kick.
Bacon Reuben
Add 2 or 3 strips of crispy bacon to each sandwich before air frying. The smoky bacon complements the salty corned beef beautifully.
Garlic Butter Reuben
Mix minced garlic and chopped parsley into the softened butter before spreading it over the bread. The result is a crispy, aromatic crust with plenty of garlic flavor.
Mushroom Reuben
Sauté sliced mushrooms with a little butter and garlic, then add them to the sandwich before air frying. Their earthy flavor works especially well with Swiss cheese and corned beef.
Caramelized Onion Reuben
Add sweet caramelized onions for a deeper, richer flavor. They provide a delicious contrast to the tangy sauerkraut.
Pastrami Reuben
Replace the corned beef with thinly sliced pastrami. The smoky, peppery flavor creates a slightly different but equally delicious sandwich.
Turkey Reuben
Replace the corned beef with sliced turkey. This variation is often associated with a Rachel-style sandwich, especially when paired with coleslaw instead of sauerkraut.
BBQ Reuben
Add a thin drizzle of barbecue sauce along with the Thousand Island dressing. The sweet and smoky flavor works surprisingly well with corned beef.
Mustard Reuben
Add a thin layer of Dijon or spicy brown mustard for extra tang. Mustard is especially good when you prefer a less sweet sandwich.
Make It A Meal
Classic Deli Meal
Serve the Air Fryer Reuben with crispy potato chips and a cold dill pickle. This is perhaps the simplest way to recreate the classic deli experience at home.
Reuben and French Fries
Pair the sandwich with crispy French fries. For an extra indulgent meal, serve the fries with Thousand Island dressing or a tangy dipping sauce.
Soup and Sandwich
A Reuben pairs beautifully with a warm bowl of soup. Tomato soup, potato soup, vegetable soup, or beef barley soup can turn the sandwich into a satisfying complete meal.
Reuben and Coleslaw
Serve with creamy or vinegar-based coleslaw. The cool, crunchy texture of the slaw provides a refreshing contrast to the hot, crispy sandwich.
Light Lunch
For a lighter meal, serve half of the sandwich with a large green salad. A simple vinaigrette can help balance the richness of the cheese and dressing.
Game Day Spread
Cut the sandwiches into smaller portions and serve them with chicken wings, potato wedges, pickles, and other finger foods. They’re especially convenient for parties because guests can grab individual pieces.
Family Dinner
Serve alongside roasted vegetables, baked potatoes, or a simple cucumber salad. The sandwich is filling enough to become the centerpiece of a casual dinner.
Deli-Style Platter
Create a complete deli platter with Reuben sandwiches, pickles, potato salad, coleslaw, chips, and mustard. This works particularly well for casual gatherings and weekend lunches.
Pro Tips
Pat the Corned Beef Dry
If the corned beef contains a lot of moisture, gently pat it dry before assembling the sandwich. This helps preserve the crispy texture of the bread.
Don’t Butter the Inside
Keep the butter on the outside of the bread. The interior should receive the dressing and filling, while the buttered exterior develops the golden crust.
Use Room-Temperature Butter
Softened butter spreads more evenly and reduces the chance of tearing delicate rye bread.
Grate or Slice Cheese Fresh
Fresh Swiss cheese melts beautifully. If using shredded cheese, distribute it evenly so it melts throughout the sandwich.
Warm the Corned Beef
For an especially hot sandwich, briefly warm the corned beef in a skillet or microwave before assembling. This can help the cheese melt faster.
Toast the Sauerkraut
Briefly cooking the sauerkraut before assembling removes excess moisture and gives it a deeper flavor.
Avoid Overcrowding
Air circulation is essential for crisp bread. Leave space between sandwiches whenever possible.
Use a Rack if Necessary
Some sandwiches can shift as the air circulates. An air-fryer-safe rack placed gently over the sandwich can help keep everything in place.
Flip Carefully
Use a wide spatula and support the entire sandwich when turning it. This helps prevent the filling from sliding out.
Add Fresh Garnishes After Cooking
Fresh parsley, chives, or sliced green onions are best added after air frying to preserve their color and freshness.
Reheat on a Lower Temperature
When reheating leftovers, use a lower temperature to warm the center without burning the bread.
Recipe FAQs
Can I use a different type of bread?
Yes. Marble rye, seeded rye, sourdough, or sturdy artisan bread can all work. Rye provides the most traditional Reuben flavor.
Can I use pastrami instead of corned beef?
Absolutely. Pastrami creates a smoky, peppery variation that is delicious with Swiss cheese and sauerkraut.
Can I use homemade Thousand Island dressing?
Yes. Homemade dressing is an excellent option and allows you to control the sweetness, tanginess, and consistency.
Why is my Reuben sandwich soggy?
The most common cause is excess moisture from sauerkraut or too much dressing. Drain and pat the sauerkraut dry and use a moderate amount of dressing.
Why isn’t my cheese melting?
The sandwich may be too thick or your air fryer may be cooking the bread faster than the filling. Reduce the temperature slightly and cook for another minute or two.
Do I have to preheat the air fryer?
Preheating is recommended because it helps the bread crisp more quickly and encourages even cooking.
Can I make the sandwich without sauerkraut?
Yes. If you don’t enjoy sauerkraut, replace it with coleslaw, caramelized onions, sautéed mushrooms, or simply leave it out.
Can I make a Reuben with turkey?
Yes. Turkey makes a lighter alternative and pairs particularly well with Swiss cheese, coleslaw, and Thousand Island dressing.
How long do leftovers last?
Store leftover Reuben sandwiches in an airtight container in the refrigerator for up to 3 days. For the best quality, reheat only the amount you plan to eat.
What’s the best way to reheat a Reuben?
Place the sandwich in the air fryer at 350°F (175°C) for approximately 3 to 5 minutes, flipping once if necessary. This helps restore the crisp bread while warming the filling.
Can I freeze a Reuben sandwich?
Freezing is possible, but the texture of the sauerkraut and dressing may change. For the best results, prepare and air fry the sandwich fresh.
Can I make it gluten-free?
Yes. Use gluten-free rye-style or other sturdy gluten-free bread and verify that the corned beef, dressing, and other packaged ingredients are gluten-free.
What cheese can replace Swiss?
Gruyère, provolone, Havarti, or mild cheddar can be used. Gruyère is particularly good if you want a richer, nuttier flavor.
Can I make it spicy?
Definitely. Add jalapeños, banana peppers, spicy mustard, hot sauce, or crushed red pepper flakes.
What can I serve with an Air Fryer Reuben?
Potato chips, French fries, onion rings, coleslaw, potato salad, pickles, tomato soup, and green salads all make excellent side dishes.

- Remove the two sandwiches from the air fryer.
- Repeat steps 2 through 12 to make two more sandwiches.
- Slice and serve. Reubens are best warm and fresh although will keep airtight in the fridge for up to 3 days.
