Air Fryer Roast Lamb

Air Fryer Roast Lamb – a quick and easy way to make the perfect lamb roast! Simply season your lamb joint and cook in your Air Fryer for beautifully tender and moist lamb.

For the Potatoes

  • 6 medium potatoes cut into wedges
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic granules
  • 1 tsp salt
  • ½ tsp ground black pepper
  • squeeze of lemon

For the Lamb

  • 900 g (2 lb) lamb joint I used half leg
  • 2 garlic cloves sliced
  • 1 tbsp fresh rosemary
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp coarse sea salt a few turns of the salt mill
  • ½ tsp black pepper freshly ground

Instructions

  1. Take the lamb out of the fridge for 30 minutes before cooking to allow it to come to room temperature. This will help it cook quickly and evenly.

  2. Cut the potatoes into thick wedges and place in a bowl. Drizzle with olive oil and season with salt, pepper, oregano and garlic granules. Add a little lemon juice and toss to combine then transfer to the basket of your Air Fryer.

  3. Place the lamb in the same dish and use a sharp knife to cut some slits onto the skin. Push small garlic clove slices into the skin. Sprinkle with the fresh rosemary and olive oil.

  4. Season with salt, pepper and oregano and place the lamb in the Air Fryer, nestling it among the potatoes. Make sure the lamb is not sticking up too much and fits well in the basket.

  5. Cook for 10 minutes at 200°C (400°F) to develop a nice crust. Lower the heat to 180°C (360°F) and continue to cook for approximately 30-40 minutes or until the core meat temperature registers 145°F/ 63°C on a meat thermometer.
  6. Check the potatoes are cooked through. Rest the lamb, loosely covered, for 20 minutes then serve.

Notes

The cooking time will depend on the size of the lamb joint and the type of Air Fryer you use so a digital thermometer is the best way to ensure the lamb is cooked to your liking.

ROAST LAMB INTERNAL TEMPERATURE GUIDELINES
The best way to check your lamb is cooked to your liking – and safely – is to check the temperature with a digital thermometer. Insert the probe in the thickest part of the joint, avoiding the bone. The guidelines below are for the UK, it is possible that these recommendations are slightly different in other countries.

  • Medium: Internal temp. 70-75°C (157-167°F)
  • Well-done: Internal temp. approx 75-80°C (167-176°F)
