Marinade for Chicken
1 ½PoundsChicken Breast
2Egg Whites
1 ½TablespoonsLight Soy Sauce
½TablespoonRice Vinegar
1 ½teaspoonsSesame Oil
Coating
¾Cup Cornstarch
½teaspoonbaking powder
½teaspoonsalt
½teaspoonwhite peppercan use black pepper
Olive Oil Spray
Sauce
1CupChicken Stock
2teaspoonsChili Garlic Sauce
1TablespoonsRice Vinegar
2TablespoonsDry Sherry(or Chinese Rice Wine, or Sake)
3TablespoonsSoy Sauce(Lite Soy Sauce works also)
3teaspoons Hoisin Sauce
1teaspoonSesame Oil
½TablespoonSugar
3teaspoonsCornstarch
Satay Oil, Garlic and Ginger
1TablespoonVegetable Oilor Peanut Oil
2Cloves Garlicminced
2teaspoonsGingerminced or finely grated

Instructions
Cut Chicken Breast into bite size pieces
Mix together Marinade – egg whites, soy sauce, rice vinegar, and sesame oil.
Pour Marinade over the chicken. Stir to coat the chicken
Mix together cornstarch, salt, white pepper, and baking powder. This is for the coating on the chicken.
Add cornstarch coating mixture to the chicken. Stir to combine
Set Chicken aside for at least 10 minutes
Air Fry Chicken
Spray Air Fryer with cooking spray (We use Olive Oil spray)
Place a layer of the marinated chicken in the Air Fryer
Air Fry chicken at 375° for 8 minutes
Toss and cook for an additional 6 minutes at 375°
Sesame Seeds
Sauté Sesame Seeds in a pan for 30 seconds to one minute, stirring constantly. NOTE: Be careful they can burn quickly. Set sesame seeds aside
Sauce
Mix together all the sauce ingredients (chicken stock, rice vinegar, rice wine/sherry, chili garlic sauce, soy sauce, hoisin sauce, sesame oil, sugar, and cornstarch)
Heat 1 TBS of vegetable oil in a large sauté pan.
Add minced garlic and ginger to the pan. Sauté for 30 seconds
Add the sauce to the pan with the garlic and ginger, and bring to a boil. The sauce will thicken. (NOTE add additional cornstarch if the sauce is not thick enough. Add ½ teaspoon at a time. Mix the cornstarch with a teaspoon of water to make sure it will not clump before putting it into the sauce)
When the sauce has thickened (about 4 minutes) stir in the air fried chicken
