These air fryer taco bombs became my secret weapon for turning regular taco night into something the kids actually get excited about. Instead of the usual taco assembly line where everyone makes their own, you get all those classic taco flavors wrapped up in crispy, golden biscuit dough with molten cheese in the center. I came up with this recipe during one of those weeks when I was tired of the same old dinner routine, and now these little bombs of flavor have become our most requested weeknight meal.
What Goes Into Them
- Refrigerated biscuit dough: The flaky layers create that perfect crispy exterior
- Ground beef: Seasoned with taco seasoning for authentic flavors
- Cheddar cheese cubes: Better than shredded because they stay put and create that amazing molten center
- Taco seasoning packet: Easy way to get all those classic spices in the right proportions
Making Them Happen
- Cooking the taco meat:
- Brown your ground beef in a skillet over medium-high heat, breaking it up as it cooks. Once it’s completely browned, add the taco seasoning packet and cook according to package directions until everything’s well combined and flavorful. Let it cool slightly so it’s easier to handle.
- Prepping the dough:
- Open your can of biscuits and separate each piece of dough. Gently roll or press each biscuit flat, you want them thin enough to wrap around the filling but not so thin they tear. Don’t worry about making them perfectly round.
- Assembly process:
- Place about a tablespoon of the cooled taco meat mixture in the center of each flattened biscuit, then top with a cube of cheddar cheese. Pull the dough up and over the filling, pinching the edges together really well to seal completely. Make sure there are no gaps or the filling will leak out during cooking.
- Air frying to perfection:
- Spray your air fryer basket with cooking spray or line with parchment paper. Place the sealed bombs seam-side down in a single layer, making sure they’re not touching. Air fry at 350°F for 5-7 minutes until they’re golden brown and crispy all over.

Ingredients
- 1 can refrigerated biscuit dough
- 1 pound ground beef
- 1 packet taco seasoning
- 24 small cubes cheddar cheese
Instructions
-
Cook ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Add taco seasoning and continue cooking until meat is browned and fully cooked. Remove from heat and let cool slightly.
-
Open the can of biscuits and separate the dough. Lightly roll or flatten each biscuit into a small circle.
-
Place about 1 tablespoon of the cooked taco meat in the center of each flattened biscuit. Top with a cube of cheddar cheese. Pull the dough up and over the filling, pinching the seams tightly to completely seal the mixture inside.
-
Lightly spray the air fryer basket with non-stick cooking spray or line with parchment paper.
-
Place the sealed taco bombs in the air fryer basket in a single layer, making sure they don’t touch. Air fry at 350°F for 5-7 minutes until golden brown and crispy.
-
Remove from air fryer and serve immediately while hot and the cheese is still melty. Serve with salsa, sour cream, or your favorite dipping sauce.
Notes
- Use small cheese cubes instead of shredded cheese to prevent leaking during cooking.
- If the dough won’t seal properly, brush the edges with water or beaten egg to help it stick together.
- Brush with melted butter before air frying for extra golden, crispy results.
- These are perfect for taco night, game day, or any time you want a fun twist on tacos.
