3 lbs tripe
2 lbs cow feet (pata de res)
1 1/4 onion
7 cloves garlic
2 tablespoons oregano
2 bay leaves
15 chile guajillo
Hominy
8 quarts water
Salt to taste
Cut your tripe in bite size pieces and wash well ( i washed a few times then let it sit in 1 cup vinegar and water for 15 minutes) wash again until you feel it is clean, same with the cows feet.
Boil cow feet in water for 30 minutes before adding tripe, skim off fat as you go.
Add tripe, salt to taste, oregano, whole onion, 5 garlic cloves and bay leaves.
Boil unti tripe is soft ( i left mine for 4 hours) add water if needed
Remove onion, garlic, and bay leaves.
Open and drain hominy and rinse before adding to menudo.
Devein and remove seeds from guajillo chiles, boil for 5 minutes- remove from heat and let sit an additional 15 minutes
In blender add your guajillos, 1/4 onion, 3 garlic cloves and a pinch of oregano
Blend for a good 3-4 minutes
Add your chile to the menudo and boil another 30 minutes
Ready to serve!
Garnish as you wish!
