Fries might be one of the most basic of side dishes, but they’re ANYTHING but boring. When those wedges of potatoes are made just right, they truly deserve to sit alongside the fanciest of main meals— or to be the star all on their own! These fries are not only coated in a tantalizing mixture of seasoning and cheese, they’re baked, instead of deep-fried, for a slightly-healthier, crispy, golden taste. They couldn’t be simpler or tastier

1 tablespoon garlic, minced very fine
2 tablespoons olive oil
2 large (russet) baking potatoes, 12 ounces each or 1½ pounds total
Salt and pepper, to taste
½ teaspoon garlic powder, or to taste

2. Cut the potatoes lengthwise in half and in half again. Cut each piece into ¼-½ inch thick strips.
