We used:
3lb beef tongue
1/2 large yellow onion cut into thin slices
1/2 large yellow onion cut in 1/2
1 tbs salt
1/2 tbs pepper
8-10 bay leaves
2-3 cups of water
Crockpot
After taking it out of the bag he rinses it really well, then he places the slices of onion at the bottom of the crockpot. Then places the tongue over the onion, he then adds water up until the tongue is half way covered. He then adds the salt/pepper, covers the tongue with bay leaves and whatever is left over he places around then he places the 1/2’s of onion on top. We didn’t add cloves of garlic but you can if you’d like and I’d go with 2. Cover it and cook on low heat for 6 hours then turn it to the other side for another 6 hours. We turn it over so that it doesn’t dry, we put ours in at 10pm last night. At 10 this morning he took it out and peeled all the skin off and trim the fat, some ppl like the fat so if you’re one of those ppl feel free to keep it. Once it’s as clean as you want it cut the tongue lengthwise into 2 inch slices, place on a large bowl and shred it with two forks by pulling it apart. I’m sure you can use a mixer for this as well. After this he transferred it to a pan and added maybe a cup of the juices left over in the crockpot and fried it a bit in the juice to make it a little more moist if not it will dry. Taste it and if you feel it’s right well then it is if not add more of the juices until you’re happy with the taste. Heat up your tortillas, add your toppings ENJOY!!!
We eat our tacos on corn tortillas, topped with chopped/ diced cilantro and onion, green salsa, splash of lime and a bit of salt 😋😋😋
