Step-by-Step Instructions

Cook the Sausage:
In a large non-stick skillet cook and crumble the ground breakfast sausage over medium heat The goal is to brown it thoroughly until all the pink is gone which usually takes about 5 to 7 minutes Use a spatula or meat chopper to break up the sausage evenly so every bite gets some
Prepare the Eggs:
Wipe out the skillet to prevent burning then add two tablespoons of butter Melt the butter over medium heat then pour in the beaten eggs Do not rush this step Scramble gently by stirring slowly letting the eggs set before each move This will keep the eggs fluffy and creamy Remove the eggs from the heat when they are just barely set to avoid overcooking
Combine Sausage and Eggs:
Discard any excess grease using a paper towel under the sausage Transfer your fluffy scrambled eggs into the bowl with the sausage Mix gently so you do not break up the eggs too much
Assemble the Sandwiches:
Butter one side of each slice of sourdough bread Be generous to ensure crispy browning Place the bread buttered side down in the skillet Layer with a slice of Colby-Jack cheese followed by a half cup of the sausage egg filling Then add another slice of cheese for extra meltiness Top with another slice of bread butter side up
Toast the Sandwiches:

Ingredients

  • ½ pound ground breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter, divided
  • 8 slices sourdough bread

Instructions

  1. In a large non-stick skillet, cook and crumble the ground breakfast sausage until no longer pink. Transfer the cooked sausage to a medium paper towel-lined mixing bowl and set aside. Wipe out the pan with a paper towel.

  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour the eggs into the pan. Once the eggs begin to set, gently stir, making scrambled eggs, until the liquid is almost gone. Remove the pan from the heat.

  3. Remove the paper towel from under the sausage, leaving the sausage in the bowl. Add the scrambled eggs to the bowl with the sausage and gently stir to combine. Wipe the skillet with a paper towel and heat it over medium heat.

  4. Butter one side of each piece of bread. Place one slice of bread into the skillet, butter side down. Top the bread slice with one slice of Colby-Jack cheese. Scoop about ½ cup of the sausage-egg mixture over the top of the cheese. Top the sausage-egg mixture with another slice of cheese, then another slice of buttered bread with the butter side facing up.

  5. Cook the bread until it begins to turn golden brown, about 3-4 minutes. Carefully flip the sandwich over and cook until golden brown on the second side.

  6. Remove the sandwich to a cutting board and cut it in half, if desired. Repeat the process with the remaining bread, cheese, and sausage-egg mixture. Serve immediately.

Notes

  1. You can make these sandwiches with just eggs and cheese, or add your favorite cooked breakfast meat such as bacon, sausage, or ham.
  2. If you prefer an over-easy, over-medium, or over-hard egg, you can do that instead of scrambled!
  3. Try using mayonnaise in place of butter to brown the bread for a unique flavor.
  4. Add a slice or two of fresh tomato with salt and pepper for added freshness.
