For those who LOVE gołompki (stuffed cabbage rolls). But don’t have the time to make them, here’s an easy alternative to getting that wonderful taste without the all day cooking marathon.
CABBAGE ROLL SOUP
Ingredients:
Onion – 1 large (diced)
Garlic – 3 cloves (minced)
Ground Beef – 1 lb
Ground Pork – 1 lb
Long Grain Rice – 1 cup (uncooked)
Cabbage – 1 medium chopped (core removed)
Diced Tomatoes – 1 28 ounce can
Tomato Paste – 2 tbsp
Beef Broth – 4 cups (Better Then Bouillon)
V8 Vegetable Juice – 2 cups (I like to use 2 small 5.5oz cans of the original V8 & 2 small 5.5oz cans of the Spicy V8)
Paprika – 1 tsp
Thyme – 1 tsp
Worcestershire Sauce – 1 tbsp
Bay Leaf – 1 or 2
Salt & Pepper – to taste
Instructions:
In a large pot, brown pork and beef. Drain any fat. Add garlic, fry till fragrant. Add onion, fry till translucent.
Stir in chopped cabbage and let cook until slightly softened (about 3 minutes).
Add all remaining ingredients, bring to a boil and reduced heat to medium low. Cover and simmer on low until rice is fully cooked (about 30 minutes). Taste test and add extra seasoning is needed. Enjoy!!!
