I tried this tonight. It’s a version of the recipe posted by Diana Ivone Valdez. It turned out very good.
2 lbs finely diced beef
2 Roma tomatoes, diced
1 baseball size sweet onions, diced
1 poblano pepper, seeded and diced
1 jalapeño pepper, seeded and diced
5 tbsp Kerrygold butter
3 tsp salt
2 tsp pepper
2 tsp garlic powder
1 tsp cumin
3 cups hot water
Sauté vegetables in butter. Add meat, water and seasonings. Cook on low to medium heat for 2 hours. Add more water if necessary.
