Christmas Gumdrop Nougat Candy

Christmas Gumdrop Nougat Candy

Christmas Gumdrop Nougat Candy is a colourful, old-fashioned holiday treat that looks beautiful on a Christmas dessert table and tastes even better. Made with creamy white chocolate, marshmallows, and chewy gumdrops, this easy no-bake candy has a soft, chewy texture and plenty of festive colour. It is simple enough for beginners and makes a wonderful homemade gift for family, friends, teachers, neighbours, and coworkers.

What is this Recipe Exactly?

Christmas Gumdrop Nougat Candy is a simple no-bake confection made by combining melted white chocolate, marshmallows, and colourful gumdrops.

Unlike traditional nougat, which can require egg whites, sugar syrup, candy thermometers, and precise temperature control, this modern homemade version is much easier. The white chocolate and marshmallows create the creamy, chewy base, while the gumdrops provide little bursts of fruity flavour and bright Christmas colour.

The finished candy is usually poured into a lined pan, chilled until firm, and then cut into small squares.

It is sometimes called Gumdrop Nougat, Christmas Nougat, or Christmas Gumdrop Candy. While it isn’t traditional European nougat in the strict confectionery sense, the name comes from its soft, chewy texture and nougat-like appearance.

The best part is that you don’t need to turn on the oven. Everything happens on the stovetop or in the microwave, making this a particularly convenient recipe during the busy holiday season.

Why This Recipe Works So Well

There is a reason this candy has become such a popular Christmas recipe.

First, it is incredibly easy. There is no complicated dough, no baking, and no candy thermometer required. Once the white chocolate and marshmallows are melted together, the remaining steps are straightforward.

Second, the texture is fantastic. The melted white chocolate provides richness and structure, while the marshmallows help create that soft, chewy consistency. The gumdrops add a pleasant contrast because they remain slightly chewy rather than disappearing completely into the mixture.

The colours also make this candy perfect for Christmas. Red and green gumdrops stand out beautifully against the white nougat base, creating a festive appearance without requiring any decorating skills.

Another reason it works so well is that it can be prepared ahead of time. You can make a batch several days before a holiday gathering, keep it properly stored, and have a homemade dessert ready when you need it.

It is also easy to portion. Instead of serving a large dessert, you can cut the candy into small bite-sized squares, making it perfect for cookie trays, dessert tables, and gift boxes.

Ingredient Breakdown: What Each Ingredient Does

White Chocolate

White chocolate forms the creamy base of the candy. When melted, it combines with the marshmallows to create a smooth mixture that sets firmly once cooled.

Use good-quality white chocolate or white chocolate melting wafers for the best texture. Chocolate that melts smoothly will produce a more consistent finished candy.

Mini Marshmallows

Mini marshmallows add softness and chewiness to the nougat. They melt more quickly than large marshmallows and are easier to incorporate into the chocolate.

If you only have large marshmallows, you can cut them into smaller pieces before melting.

Gumdrops

Gumdrops are the star ingredient. They add colour, sweetness, fruity flavour, and a chewy texture.

For a traditional Christmas appearance, choose red and green gumdrops. You can also use a mixture of colours for a more playful candy.

Try to avoid extremely large gumdrops because they can make the candy difficult to cut. Cutting larger gumdrops into smaller pieces can make them easier to distribute throughout the mixture.

Butter

A small amount of butter can help create a smoother, richer mixture and make the candy easier to work with.

It can also help prevent excessive sticking when melting the ingredients.

Vanilla Extract

Vanilla adds warmth and helps balance the sweetness of the white chocolate and marshmallows.

Even a small amount can make the finished candy taste more like a homemade confection rather than simply melted ingredients.

When to Serve (Holiday Ideas & More)

Christmas Gumdrop Nougat is perfect for almost any holiday occasion.

Serve it on a Christmas dessert platter alongside cookies, fudge, chocolate-covered pretzels, and other homemade sweets.

It is also excellent for Christmas parties because guests can simply pick up a small square without needing plates, forks, or additional serving utensils.

You can make a batch for a holiday cookie exchange and package several pieces in a small Christmas box or cellophane bag.

It also makes a thoughtful homemade gift for teachers, neighbours, coworkers, friends, and extended family.

For Christmas Eve, arrange the candy on a festive serving tray alongside hot chocolate, cookies, and other treats.

You can even make several batches using different gumdrop colours for birthdays, baby showers, Valentine’s Day, or other celebrations.

Make Ahead & Storage Tips

One of the biggest advantages of this recipe is how well it works as a make-ahead dessert.

Prepare the candy according to the recipe, allow it to set completely, and cut it into squares once firm.

For short-term storage, place the pieces in an airtight container. Separate layers with parchment or wax paper to prevent them from sticking together.

Keep the container somewhere cool and dry. Avoid warm locations, direct sunlight, or areas near the oven because white chocolate can soften when exposed to heat.

If your kitchen is particularly warm, refrigeration can help the candy stay firm. However, allow refrigerated pieces to sit at room temperature briefly before serving if you prefer a softer texture.

When preparing the candy for gifts, make sure it has completely cooled and set before packaging.

FAQ Section

Can I use any type of gumdrops?

Yes. Traditional red and green gumdrops are perfect for Christmas, but you can use assorted colours if you prefer.

Does Christmas Gumdrop Nougat need to be refrigerated?

Not necessarily. It can generally be stored in an airtight container in a cool, dry place. Refrigeration may be helpful if your kitchen is warm.

Can I make this candy ahead of Christmas?

Absolutely. Making it ahead is one of the reasons this recipe is so convenient during the holidays.

Why is my nougat too soft?

The mixture may not have been allowed enough time to set, or the proportions of chocolate and marshmallows may have been changed. Give it additional chilling time before deciding that the candy hasn’t worked.

Why is my white chocolate grainy?

White chocolate can become grainy or seize if it gets too hot or comes into contact with moisture. Melt it gently and avoid overheating.

Can I freeze gumdrop nougat?

Freezing isn’t usually necessary. The texture is best when the candy is stored properly at cool room temperature or refrigerated when needed.

Can I use large marshmallows?

Yes. Cut them into smaller pieces so they melt more evenly.

How small should I cut the candy?

Small bite-sized squares are ideal because this candy is quite rich and sweet.

Variations & Substitutions

There are plenty of ways to make this recipe your own.

Different Gumdrop Colours

Use traditional red and green gumdrops for Christmas, pastel colours for Easter, or rainbow gumdrops for birthdays.

Add Nuts

Chopped pecans, walnuts, almonds, or pistachios can add crunch and contrast to the soft candy.

Add Coconut

A small amount of shredded coconut can give the candy a festive texture and a subtle tropical flavour.

Add Peppermint

For a stronger Christmas flavour, add a small amount of peppermint extract. Be careful because peppermint extract can be quite strong.

You can also sprinkle crushed peppermint candy over the top before the mixture sets.

Try Different Extracts

Vanilla isn’t your only option. Almond, orange, coconut, or peppermint extract can change the flavour considerably.

Add Sprinkles

Christmas sprinkles can be mixed into the candy or sprinkled over the top while it is still soft.

Use Different Chocolate

Although white chocolate is the classic choice for this colourful version, you can experiment with other confectionery coatings. Keep in mind that changing the chocolate can significantly alter the colour, sweetness, and texture.

Allergy-Friendly Variations (Nut-Free, Gluten-Free, Dye-Free Options)

Nut-Free

The basic recipe can be made without nuts. If you’re preparing candy for someone with a nut allergy, avoid adding nuts and carefully check the labels of your chocolate, marshmallows, and gumdrops for allergen information.

Also consider cross-contact if the candy is being prepared in a kitchen where nuts are regularly used.

Gluten-Free

Many of the basic ingredients used in this type of candy can be gluten-free, but you should check the packaging of each ingredient rather than assuming.

Look specifically at the white chocolate, marshmallows, gumdrops, flavourings, and any optional toppings.

Dye-Free

If you want to avoid artificial food colouring, look for naturally coloured gumdrops or choose a different mix-in that gets its colour from natural ingredients.

Keep in mind that traditional colourful gumdrops often contain food colouring, so check the ingredient list carefully.

Dairy-Free

If you need a dairy-free version, use a suitable dairy-free white chocolate or confectionery alternative and verify that all other ingredients meet your dietary requirements.

The texture may vary depending on the substitute you choose.

Budget Breakdown (Approximate)

Christmas Gumdrop Nougat is also a relatively inexpensive homemade treat, especially compared with buying a large selection of packaged holiday candy.

The biggest cost will usually come from the white chocolate. Gumdrops and marshmallows are generally inexpensive ingredients, and you only need a small amount of vanilla and butter.

A typical batch can often be made for approximately $8–$15, depending on the brands and quantities purchased.

If you already have butter and vanilla extract in your pantry, the cost can be even lower.

Homemade candy also becomes more economical when you’re making several gift boxes at once. Instead of purchasing individual Christmas treats, one batch can be divided into multiple small packages.

Prices vary significantly by location, brand, package size, and where you shop, so consider this a general estimate rather than an exact cost.

Troubleshooting Tips

The Mixture Is Too Thick

If the mixture becomes extremely difficult to stir, it may have cooled too much or the ingredients may not have melted completely.

Work quickly while the mixture is warm and smooth.

The Candy Is Too Sticky

Make sure the candy has had enough time to set completely. Cutting it too early can make it appear much softer and stickier than it will be once fully chilled.

Using parchment or wax paper between layers also helps prevent sticking during storage.

The Gumdrops Are Sinking

If the mixture is too warm and loose when the gumdrops are added, heavier pieces may move toward the bottom.

Allow the melted mixture to cool slightly before folding in the gumdrops, while making sure it is still soft enough to stir.

The White Chocolate Seized

White chocolate is sensitive to heat and moisture. Melt it slowly and stir frequently.

If using a microwave, heat in short intervals rather than continuously.

The Candy Won’t Set

Check that the correct amounts of ingredients were used. Too much liquid or an incorrect chocolate-to-marshmallow ratio can affect the final texture.

Allow additional chilling time before making adjustments.

The Candy Is Difficult to Cut

Use a sharp knife and cut the candy once it has fully set but isn’t extremely cold and hard.

Wiping the knife between cuts can also help create cleaner squares.

How to Give This as Gifts

Christmas Gumdrop Nougat is practically made for homemade holiday gifts.

Once the candy has completely set, cut it into small squares. Place parchment or wax paper between layers so the pieces don’t stick together.

You can place several pieces inside a clear cellophane bag and tie the top with a festive ribbon.

For a more polished presentation, use a small Christmas gift box lined with parchment paper.

You can also create a homemade Christmas candy assortment by combining gumdrop nougat with fudge, cookies, peppermint bark, chocolate-covered pretzels, and other treats.

Add a small handwritten label with the name of the candy and the date it was made.

If you’re giving the candy to someone with food allergies, include a complete ingredient list and clearly identify any common allergens.

For shipping, consider the temperature carefully. White chocolate-based candy can soften or melt during warm weather, so insulated packaging and cold packs may be necessary when shipping.

Why This No-Bake Christmas Candy Still Goes Viral Every Year

There is something very shareable about a Christmas recipe that looks impressive but requires very little effort.

Gumdrop Nougat has several qualities that make it especially appealing for holiday food content.

The first is its appearance. Bright red and green gumdrops create a colourful contrast against the white candy base, making the finished squares naturally photogenic.

The second is the short ingredient list. Recipes that promise a homemade treat without a long shopping list are especially attractive during the busy holiday season.

The third is the no-bake preparation. During Christmas, kitchens can become crowded with cookies, pies, casseroles, and other dishes. A dessert that doesn’t require oven space has an obvious advantage.

And then there is nostalgia.

Many people associate gumdrops, marshmallows, fudge, and homemade Christmas candy with holiday gatherings and family traditions. Even people discovering the recipe for the first time may find the combination familiar and comforting.

The recipe is also easy to customise, easy to photograph, easy to package, and easy to share, which helps explain why variations of this candy continue appearing across holiday recipe collections and social media.

Ingredient Spotlight: Why White Chocolate Works Best for Homemade Nougat

White chocolate is particularly useful in this style of homemade nougat because of its creamy flavour and pale colour.

Traditional chocolate would cover the bright colours of the gumdrops, while white chocolate creates a neutral background that allows the red and green pieces to stand out.

White chocolate also melts into a smooth mixture when handled correctly. Once cooled, it helps the candy become firm enough to cut while still maintaining a creamy texture.

The sweetness of white chocolate also complements the slightly fruity flavour of gumdrops.

Because white chocolate is naturally sweet, the candy is quite rich. This is another reason why small squares are ideal for serving.

When choosing white chocolate, look for a product that melts smoothly. Some inexpensive baking products can behave differently from high-quality white chocolate or melting wafers, so the specific product can affect the finished texture.

Classic vs. Modern Gumdrop Nougat – What’s the Difference?

Traditional nougat and modern gumdrop nougat are two very different types of confectionery.

Classic nougat is generally made by cooking sugar or honey syrup to a specific temperature and incorporating whipped egg whites. Depending on the style, it may also contain nuts such as almonds or pistachios.

The process requires more precision because temperature has a major effect on the final texture.

Modern gumdrop nougat is designed to be much easier.

Instead of preparing a cooked sugar syrup, the recipe uses ingredients such as white chocolate and marshmallows to create a soft, chewy confection. Gumdrops are then folded into the mixture for colour and flavour.

The result isn’t traditional nougat in the classical confectionery sense, but it provides a similar soft and chewy experience while being considerably easier for a home cook.

That simplicity is part of the appeal. You can create a festive homemade candy without specialized candy-making equipment or advanced confectionery skills.

How to Package Gumdrop Nougat for Gifting (No-Melt, No-Stick Tips)

Proper packaging is important because the candy can become sticky if exposed to heat or humidity.

First, allow the nougat to set completely before packaging it.

Cut it into even pieces and place parchment or wax paper between the layers. This prevents the pieces from sticking together.

For individual gifts, wrap each piece in wax paper or place it in a small candy cup before putting it into a gift box.

If using a cellophane bag, don’t pack the pieces too tightly. Give them enough room so they don’t become compressed.

Store finished gift packages somewhere cool and dry until you’re ready to give them away.

If the weather is warm, refrigeration may be useful. However, condensation can develop when cold candy is moved into a warm environment, so allow it to adjust gradually.

For shipping during warm weather, consider insulated packaging and cold packs, especially if the candy will spend significant time in transit.

A small Christmas sticker, ribbon, handwritten tag, or custom label can turn a simple homemade candy into a beautiful holiday gift.

My Personal Kitchen Notes

When making Christmas Gumdrop Nougat, I like to have everything measured and prepared before starting. Once the chocolate and marshmallows are melted, the process moves quickly.

I also recommend cutting the gumdrops into smaller pieces if they are large. Smaller pieces distribute more evenly throughout the candy, so you get colourful gumdrops in almost every bite.

Don’t rush the setting stage. It can be tempting to start cutting the candy as soon as it looks firm, but giving it enough time to completely set makes a big difference.

I also prefer using parchment paper to line the pan. It makes removing the entire slab of candy much easier and saves you from trying to pry sticky candy from the edges.

Finally, remember that this is a rich and sweet treat. Small squares are more than enough for serving, especially when the candy is part of a larger Christmas dessert tray.

My Final Thoughts

Christmas Gumdrop Nougat Candy is the kind of holiday recipe that proves homemade treats don’t have to be complicated. With a creamy white chocolate base, soft marshmallows, and colourful gumdrops, you get a festive candy that looks beautiful and requires very little hands-on work.

It’s perfect for Christmas parties, cookie exchanges, dessert tables, and homemade gifts. You can keep the traditional red-and-green look or customise the colours and flavours for your own family.

Most importantly, this is a recipe that’s easy to prepare ahead of time and share with others. Whether you make it for your Christmas table or package it into little gift boxes, this colourful no-bake candy is a fun addition to the holiday season.

Christmas Gumdrop Nougat Candy

This Christmas Gumdrop Nougat Candy is an easy no-bake treat that’s perfect for the holiday season. Great as a homemade gift!

  • Author: Brandy
  • Prep Time: 25 minutes
  • Total Time: 25 minutes
  • Yield: 60 1x
  • Category: candy

Ingredients

Scale
  • 2 tbsp butter
  • 2 225 gram bags white chocolate chips (DO NOT USE Chipits)
  • 2 250 gram bags of mini marshmallows
  • 1 1/2 cups chopped red and green gumdrops

Instructions

  1. Prepare an 8×8 square baking dish by lining it with parchment paper.
  2. Cut the gumdrops in half.  Set aside.
  3. Melt the butter, white chocolate chips and marshmallows together over indirect medium heat.  To do this I create a double boiler by putting a heatproof bowl over a saucepan of gently simmering water (making sure that the bowl and pan fit together snug).  This ensures that the mixture doesn’t burn.
  4. Continuously stir the mixture until it is smooth and melted together, making sure not to cook the mixture…the goal is to just melt, not cook or boil. See tips above in this post!
  5. Remove from heat.
  6. Let cool for about 2 minutes.
  7. Stir in the gumdrops.  Mix well.
  8. Pour the mixture into the prepared pan.
  9. The mixture will be very sticky, so I use a lightly greased piece of parchment paper or wax paper to help spread and pat the mixture down into the pan.
  10. Refrigerate for at least 2 hours before cutting, overnight is best.
  11. Slice into 60 bite sized pieces.
  12. To store the candies, use parchment paper between layers so the candies don’t stick together.
  13. Enjoy this nougat recipe!

Notes

About the white chocolate chips: Use ONLY real white chocolate chips, DO NOT USE Chipits…Chipits don’t melt.
