Ingredients
1 tbsp olive oil
½ cup chopped yellow or white onion
3 fresh garlic cloves, chopped
½ fresh jalapeno, chopped optional
2 ½ cups cooked, shredded chicken rotisserie or poached chicken work well!
8 oz cream cheese softened at room temp
4 oz sour cream
4 oz can chopped green chilies do not drain
½ teaspoon kosher salt
10-12 flour tortillas soft taco size
2 (10 oz) cans red enchilada sauce
8 oz block cheese, shredded, any flavor- monterey jack, colby jack, pepper jack, cheddar. Divided, (if using pre-shredded it is about 3 cups total)
Serving
toppings – avocado, cilantro, and/or green onions
