The shell-coated potato with kielbasa is my version of the creamy-clad potato – I just started with the meat … the sweet smoked flesh.
This recipe for spotted potato is totally delicious on its own, but every now and then I like to add sausage. It transforms it from a creamy side dish to a main course. He loves White Kelpasa.
Of course he would say no if I asked him. We’ve always referred to it as “sausage” to help him be more open. He tends to claim he doesn’t like something even before he tries it. Drive me crazy! I’ve heard the “I don’t like it” food days are coming … but it’s so sad to see it here already.
It’s especially sad and frustrating when you spend the time and money preparing a meal that you know your kid will love … if only he’d put it in his stubborn little mouth! Plus, what don’t you like about smoked potatoes, cheese, and sausage?
If you have an answer for that, I don’t want to hear it.
In any case, rest assured that this dish should please everyone at your table … even the youngest of four !
