Fluffy jam and coconut

This is the easiest thing EVER to make – the prep is done in 10 minutes using an all-in-one method and using only store cupboard ingredients! Perfect if you want something sweet in a hurry!

You’ll need:
225g butter or spread
225g caster sugar
285g self raising flour, sifted
2 tsps baking powder
1 tsp vanilla extract
4 tbsp milk
4 large eggs

Preheat the oven to 160 degrees fan.
Line a 9×13 inch baking tin with baking paper.
In a stand mixer, mix together all the ingredients for 2 minutes.
Pour the mixture into the lined tin and spread flat with a spatula.
Bake on the middle shelf for 32-36 minutes or until golden and a skewer comes out clean. If you press it with your finger, it should bounce back.
Remove from the baking tin onto a cooling rack.
Spread over the jam while it’s still warm and sprinkle over the coconut. Cut into pieces and serve either on its own or with custard. So fluffy and so good!
