Seering
In a full heat cast iron skillet temp. Meduim high
Add 1/2tsp. oil
Add ribs and seer crispy
Once its seered
Add 2 cups water stir and
Cover let cook until ribs are tender for 21/2 hrs.
While meat is cooking
Roasting chili
6 jalapenos or if not spicy add less
8 tomatillos
1 roma tomatoe
1/4onion
4garlic teeth
Roast all ingredients on comal (pan)
Once they are roasted tender add to blender
Add 1 tsp salt
With 1/2 cup water or juices from the costillas
And blend
Add together in the pot with meat. Let it finish cooking the last hr. With the costillas( ribs)
Serve with frijoles and garnish to your liking.
