Ingredients :
11 whole graham crackers crushed
1/4 C butter
2 Tbs sugar
Mix crushed graham crackers with butter and sugar, put in springform pan and pat out covering bottom of pan
FILLING
5 8 oz cream cheeses room temperature
1 1/3 C sugar
3 large eggs
2 tsp lemon zest
1 1/2 tsp vanilla
3 Tbs all purpose flour
1/2 C sour cream
In a large bowl beat cream cheese on medium for 2 minutes , add sugar, mix, add flour, mix, add eggs , one at a time mix until blended, making sure to scrape sides of bowl, add lemon zest, vanilla and sour cream , mix until well blended, preheat oven to 400 degrees
Pour batter onto crust, bake on 400 for exactly 15 minutes, turn oven down to 200 degrees bake exactly 1 hour , then turn oven off , leave in the oven but crack the door open so that it gradually cools for 1 hour , remove from oven , using a knife go around the outside edge of cake to loosen it from pan. You can line the wall of your pan prior to adding batter for easier removal, let cool completely then cover and refrigerate over night , enjoy
