Here’s my recipe:
-3 lbs of boneless pork loin
-1 can of cooked hominy
-8 to 10 dried chile guajillos
-2 dried chile ancho
-2 dried chile de arbole
-2 to 4 garlic cloves
-2 bay leaves
-1/4 onion, cut into 2 pieces
– Season to taste according to your palate: oregano, onion powder, cumin powder, salt, pepper.
-To garnish: diced onion, cilantro, wedged limes, tapatio.
Cube the pork and cover with water in a stock pot, season with salt and add bay leaves. Boil on medium about 40 min. Strain with a slotted spoon as it cooks to remove any floating particles. While meat is cooking place chiles in a pot and boil till soft about 20 min. Then deseed. Place in blender with the onion and garlic. Add some salt. Add 2 cups of Chile water. Blend till smooth.
Add hominy to pot and cook another 30 min. Add your blended chiles to stock pot and add more seasonings to taste and let cook an additional 15 min. Enjoy!!!
