POTATO ROLLS WITH BACON

  • 5 Potatoes medium-sized
  • 8.8 oz Deli Ham sliced
  • Manchego Cheese: 250 grams sliced
  • Bacon: 250 grams strips
  • Fresh Spinach: 250 grams
  • Onion: ½ finely diced
  • Parsley: 10 grams finely chopped (plus some for garnish)

Instructions

  1. Potato Preparation: In a large pot, add water, a pinch of salt, and a drizzle of oil. Bring to boil and add the potatoes. Cook until tender.
  2. Sauté Onions: In a skillet over medium heat, add a touch of oil and sauté the finely diced onions until translucent.
  3. Spinach and Parsley: Roughly chop the spinach and combine with the finely chopped parsley.
  4. Potato Mixture: Once potatoes are cooked, drain and peel them. Mash them in a large bowl and combine with the sautéed onions and parsley.
  5. Assembly: Spread the potato mixture on a large piece of aluminum foil, shaping it into a rectangle. Layer the ham, cheese, and spinach over the potato base. Carefully roll, using the foil to assist, until you have a tight log.
  6. Bacon Wrap: Wrap the potato roll with strips of bacon, ensuring it’s fully covered.
  7. Baking: Preheat your oven to 180°C (350°F). Place the bacon-wrapped potato roll in the oven and bake for approximately 35 minutes or until the bacon is crispy and golden.
  8. Serving: Once baked, remove from the oven and let it cool slightly. Slice into thick rounds and garnish with fresh parsley.
