2 red bell peppers
2 green bell peppers
6 or 7 garlic cloves (optional but highly recommended!)
Extra virgin olive oil
Sea salt
Instructions
Start by cutting the whole peppers in half. Remove the stem and seeds.
Brush the sweet peppers with olive oil on both sides using a brush, and add a pinch of salt on the non-skin side.
Add the bell pepper halves to the air fryer basket with the skin facing down. Make sure to leave space between peppers (roast in batches as required). Add a few garlic cloves in the empty spaces. Cook at 200C for 20 minutes. They should have perfect charred edges when the time is up!
Let them cool, and remove the skin of the pepper.
Notes
The number of pepper halves that you can add to the air fryer basket will depend on your model! If you have a smaller air fryer you might only fit 2 halves.
Check how the peppers are roasting after 15 minutes.
You can cut the roasted peppers however it’s going to be more convenient for you! I like to cut them in 1.5-2cm wide strips.
Homemade roast peppers last 4-5 days in the fridge. Store in an airtight container or a bowl covered with compostable plastic wrap.
You can also marinate the roasted bell peppers in a jar with extra virgin olive oil. This will extend the life of the peppers up to 2 weeks.
