Slow Cooker Scalloped Potatoes are a comforting and creamy side dish made with thinly sliced potatoes layered with a rich, cheesy sauce. Cooking them in the slow cooker saves oven space and ensures perfectly tender, melt-in-your-mouth potatoes. Whether you’re preparing a family dinner, holiday meal, or potluck dish, these scalloped potatoes are a guaranteed hit.

🧀 Ingredients

For 6–8 servings:

  • 6 medium potatoes (Yukon Gold or Russet), peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk (whole milk or 2%)
  • 1 cup heavy cream (optional for extra creaminess)
  • 2 cups shredded cheddar cheese (sharp or mild, divided)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional, for color)
  • Chopped parsley (for garnish)

👩‍🍳 How to Make Slow Cooker Scalloped Potatoes

Step 1: Prepare the sauce

  1. In a medium saucepan, melt butter over medium heat.
  2. Whisk in the flour and cook for 1 minute until it forms a paste (roux).
  3. Gradually whisk in the milk and cream, stirring constantly until the mixture thickens (about 3–5 minutes).
  4. Add 1½ cups cheddar cheese, Parmesan, garlic powder, salt, pepper, and paprika.
  5. Stir until the cheese melts and the sauce is smooth.

Step 2: Layer the potatoes

  1. Lightly grease the slow cooker with butter or nonstick spray.
  2. Layer half of the sliced potatoes evenly on the bottom.
  3. Add half of the sliced onions and pour half of the cheese sauce over them.
  4. Repeat with the remaining potatoes, onions, and sauce.
  5. Sprinkle the top with the remaining cheddar cheese.

Step 3: Cook

  • Cover and cook on LOW for 5–6 hours, or until the potatoes are tender and the sauce is bubbly.
  • Avoid opening the lid too often—it can release heat and slow down cooking.

Step 4: Serve

  • Garnish with chopped parsley before serving.
  • For a golden top, transfer to an oven-safe dish and broil for 3–5 minutes.

🍽️ What to Serve With Scalloped Potatoes

These creamy potatoes pair beautifully with:

  • Roast beef, ham, or grilled chicken
  • Steamed vegetables or a fresh green salad
  • Slow Cooker Pot Roast or Garlic Butter Beef Bites

💡 Tips & Variations

  • Add bacon: Sprinkle cooked, crumbled bacon between layers for a smoky flavor.
  • Extra cheese: Mix in mozzarella or Gruyère for a richer taste.
  • Make ahead: Slice the potatoes and prep the sauce up to a day ahead; store separately in the fridge.
  • Creamier texture: Use heavy cream instead of milk or half-and-half.
