Snickerdoodle Muffins

° Eggs – 2

° Vanilla extract – a teaspoon

° flour – three quarters of a cup

° Cocoa – a quarter cup

° Baking Powder – 1 teaspoon

° Sweetened Condensed Milk – 1 cup

° Vegetable oil – a quarter cup.

° Grated lemon peel – a tablespoon

* The method of work :

 

1- Whisk the two eggs with the vanilla until you get a light yellow foamy mixture.

 

2- Add the oil and the sweetened condensed milk gradually, while whisking continuously.

 

3- Add the lemon peel and stir.

 

4- In a bowl, sift the flour, cocoa and baking powder.

 

5- Add the flour mixture to the egg mixture and stir with a spatula until the ingredients overlap.

 

6- With an ice cream spoon, pour the mixture into the gaps of a cupcake tray spread with a little butter and spread with flour

 

7- Bake the muffins in a preheated oven at 175 degrees Celsius for 15-20 minutes until soft.
