Ingredients:
– 2 cups of sour cream
– 1/3 cup of mayo
– 1/2 cup of chopped cilantro (more or less up to you)
– 1/2 lime
– queso fresco but can use parmesan
– Tajín
– corn with husk
Clean corn – peal down the husk about half way (do not remove just) and clean the corn silk out. Rewrap the husk back on, you can cut the end of corn as well. Then roll with Saran Wrap.
Cook on microwave for 15 mins
Mix sour cream, mayo, cilantro and lime in a bowl
Once corn is done, remove Saran Wrap and husk
Spread mix evenly on corn
Spread crumble queso fresco or Parmesan cheese
Top off with tajin to taste
