Tacos Gobernador (shrimp and cheese tacos)
2 poblano chiles, skinned, seeded and cut into strips
2 tablespoons butter, lard or olive oil
1/2white onion diced
2 cloves garlic, minced
1 serrano chile (optional)
2 Roma tomatoes, seeded and diced
1 pound peeled shrimp, cut into bite-sized pieces
Salt
1/2 teaspoon Mexican oregano (optional)
2 tablespoons chopped cilantro
1/2 pound shredded cheese mozzarella or anyone that melts
Corn tortillas
– 2c. Maseca amarillo(yellow corn masa)
-1 1/2c. Room temp water*may need more
-1/2 tsp baking powder
