*To get this wonderful salad, you will need:

°Crushed pineapple, I used two large 20 oz cans drained.
°Whip frozen coconut, I used three cups thawed.
°Half cup pistachios.
°Half a cup of granola, I used granola with almonds and honey.
°Cup: From Greek vanilla yogurt, you can also use coconut milk yogurt.
°Half a cup of baby spinach.
°A tsp almond extract.

*And to do that, you need to follow these steps:

The first step:
Combine spinach, vanilla Greek yogurt, almond extract, and salt in a blender until all of the spinach is shredded and the mixture is green.
The second step:
In a large mixing bowl, combine the drained pineapple, whipped coconut, pistachios, and granola.
Third step:
Toss the salad with the green Greek yogurt mixture as soon as you pour it over it.
The fourth step:
If you are using dates, cut them out and add them.
Fifth step:
Place the mixture in the refrigerator for 2-3 hours to cool completely before serving.

Enjoy !
