Air fryer broccoli and mushrooms are a gorgeous combination of meaty mushrooms and tender, juicy broccoli, all combined with the delicious umami flavor of soy sauce.

Combining beefy Bella mushrooms and wonderfully rich shiitake mushrooms with fresh and earthy broccoli, these air fryer broccoli and mushrooms are a winning combination. You’ll love how this savory dish combines tastes and textures for a satisfying bite.

Cooking broccoli and mushrooms in air fryer is the best way to make the most of these fantastic veggies. Air frying seals in all of the natural juices while gently crisping up the outside. No more mushy vegetables here!

Using a small amount of soy sauce or coconut amino to the broccoli and mushrooms brings out the natural flavors and adds a hint of saltiness that is so tasty! Fantastic as a side or as the main dish.

Ingredients you’ll need to make broccoli and mushrooms 

Baby Bella mushrooms: Also known as cremini, portabellini, and mini Bella, baby Bella mushrooms are younger versions of portabella mushrooms, harvested earlier in their growing cycle. They have an excellent meaty taste and are great for air frying because they withstand high temperatures well. You can also use white mushrooms.

Shiitake mushrooms: have a deeper, richer flavor than other mushroom varieties, which is why they’re so fabulous in this broccoli and mushroom recipe! You can substitute them for oyster mushrooms or tempeh if you like it.

Broccoli: When choosing broccoli, look for dark green florets. Broccoli that has started to turn light green or yellow is past its best.

Coconut amino/low sodium soy sauce: Just as delicious as soy sauce and adding the same umami layer to your dish, coconut aminos are made by fermenting coconut palm sap. 

How to cook broccoli and mushrooms in an air fryer?

Seasoning the Vegetables: In a large bowl or medium sheet pan, add the mushrooms, broccoli, garlic powder, olive oil, coconut amino or soy sauce, salt, and pepper and toss to combine.

Air Fry Mushrooms and Broccoli: Add the mushrooms and broccoli to the air fryer basket and cook at 400ºF for 7 minutes; shake the basket or stir and cook for additional 7 minutes or until fork tender. Serve and Enjoy!

Recipe Tips:

  • You can use only one kind of mushroom if you prefer, or substitute the shiitake mushroom with oyster mushrooms or tempeh to keep the recipe plant-based.
  • Store leftovers in an airtight container for up to 5 days and reheat in the air fryer for 3-5 minutes at 380ºF.

  • 4 oz shiitake mushrooms, sliced
  • 1 pound broccoli cut into florets
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons coconut amino or low sodium soy sauce
