This easy Air Fryer Potatoes and Carrots recipe is incredibly delicious and makes a fantastic side dish to go with any meal. The air fryer does all the work for you and the veggies come out perfectly browned and tender in just 25 minutes!
Ingredients
3 Potatoes
3 Carrots
Olive Oil
Salt
Pepper
Instructions
Wash the potatoes and carrots. Then peel the carrots if needed. For the potatoes, you can leave them peeled or unpeeled. Now, cut the potatoes into chunks and put them into a large bowl. Then cut the carrots if needed and add them to the potatoes in the bowl.
Drizzle the potatoes and carrots with olive oil and then sprinkle them with salt and pepper to taste. Next, toss everything together until it’s well coated with the oil and seasonings. You can use as much or as little oil and seasonings as you like.
Put the potatoes and carrots into the air fryer basket and cook at 400°F for 25 minutes. Then halfway through cooking, at about 12 minutes, remove the air fryer basket and shake it so that everything cooks evenly. You can also use a spatula to flip the potatoes and carrots over. Then put the basket back into the air fryer to finish cooking.
When done, remove the roasted potatoes and carrots from the basket and enjoy!
