Air Fryer Potatoes And Carrots

  • 1 lb baby red potatoes chopped
  • 1 lb large carrots sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 teaspoon paprika minced
  • Salt and pepper to taste
  • 2 teaspoons italian seasoning

Instructions

  1. Preheat your air fryer to 390 degrees for about 2-3 minutes.
  2. In a large mixing bowl bowl, toss the potatoes and carrots with olive oil to coat them evenly. Add the garlic, paprika, salt and pepper, and italian seasoning. Mix well to ensure the vegetables are coated with the seasoning on all sides.
  3. Arrange the seasoned potatoes and carrots in a single layer in the air fryer basket. Place the air fryer basket into the air fryer and set the cook time for 12 minutes. Depending on the thickness of the potatoes and carrots you may need to cook for an additional 2-3 minutes. Midway through cooking shake the vegetables to ensure they cook evenly.
  4. When the timer goes off and the air fryer is done cooking, pierce a piece of potato or carrot with a fork or toothpick to check for doneness. Once done transfer the air-fried potatoes and carrots to a serving dish and serve immediately.
