Christmas Buckeye Balls Recipe

Ingredients

1 1/2 cups creamy peanut butter

1/2 cup butter, softened

1 tsp. vanilla extract

4 cups sifted confectioner’s sugar

6 ounces semi-sweet chocolate chips

2 Tbsp. shortening

Directions

Line a baking sheet with wax paper. In a medium bowl, combine peanut butter, vanilla extract, confectioner’s sugar and butter. Use hands to form a stiff but smooth dough.

Shape the dough into bite-sized balls. Place balls on baking sheet and refrigerate.

Partially fill a pot with water and bring to boil. In a metal bowl, combine shortening and chocolate. Place bowl over boiling water and lower heat. Stir until the mixture melts and is smooth. Remove from heat.

Take balls out of refrigerator. With a toothpick, dip the balls into melted chocolate. Return balls to wax paper, chocolate side down and remove toothpicks. Refrigerate for 30 minutes.
