Roasted Red Potatoes In Air Fryer

To make red skinned potatoes with a perfectly crispy outside and tender, fluffy inside, you’ll love this Air Fryer Red Potatoes Recipe. It’s so easy to cook seasoned potatoes in the air fryer.

Ingredients

  • 6 red skin potatoes
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Start by prepping the potatoes. Wash and dry, then chop into about 1” pieces. No need to peel the thin skin, just leave it on.
  2. Add to a medium-sized bowl and pour on the olive oil. Sprinkle in salt and pepper.
  3. Using a large spoon, toss potatoes in seasoning and oil to coat all sides completely.
  4. Add seasoned potato pieces to air fryer basket and set to cook at 400 degrees for 25 minutes.
  5. Halfway through cooking time (about 12 minutes), pull basket out of air fryer and give it a good shake to move around potatoes. Replace basket and finish cooking.
  6. After time is up, remove potatoes from air fryer basket and serve.

Notes

  • Red skin on the potatoes is edible and delicious, no need to peel off
  • Chop potatoes into same sized pieces (about 1” thick) for even cooking
  • Be sure to shake the basket well halfway through cooking time, to get nice, crispy outsides on all the potatoes
  • If any potato pieces stick to the bottom of the air fryer basket after cooking, use spatula to remove them
