This easy recipe is great for beginners and delivers amazing results every time! Chuck roasts are inexpensive cuts of beef that are cooked in the oven at a low temperature for a few hours. Add a handful of veggies and some delicious herbs for the perfect meal.
Similar to Mississippi pot roast that’s made in a slow cooker, this pot roast is made in the oven, but the pot can also be roasted in an Instant Pot if you have one!
Pot roasting is an instant favorite in any home! Not only are they easy to assemble, but they make great grilled sandwiches as leftovers, or folded into rolls or pita bread. Serve this delicious recipe over mashed potatoes with homemade garlic bread.
* Ingredients
° 2 kg / 4 lbs roast beef, cabbage (note 1)
° 1 teaspoon each salt and pepper
° 2 tablespoons olive oil
° 1 onion (large), cut into large cubes
° 5 garlic cloves, peeled and mashed (Note 2a)
° 5 carrots, peeled and cut into 2.5 cm/inch pieces
° 3 celery stalks, cut into 4cm/1.5in pieces
° 1 cup (250 ml) dry red wine (with beef broth)
° 3 cups (750 ml) reduced-salt beef broth
° 1/3 cup (50 g) flour (regular/all-purpose) (GF – Note 2B)
° 1 teaspoon dried rosemary
° 1 1/2 teaspoon dried thyme
° 750 g / 1.5 lb potatoes, peeled and diced 2.5 cm
