Air Fryer Cajun Potatoes

Ingredients
- 1 – 24 ounce package small Yukon Gold potatoes
- 1–½ tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons Cajun seasoning
- ¼ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon fresh cracked pepper
- 1 tablespoon chopped fresh chives
Instructions
- Cut the potatoes into halves and/or quarters, making sure they are all about the same size. Add the potatoes to a large bowl.
- In a microwave-safe cup or bowl, melt the butter. Add in the olive oil, Cajun seasoning, oregano, garlic powder, and pepper. Whisk until blended. Pour the seasoning blend over the potatoes and toss to coat.
- Place the potatoes in the basket of the air fryer, being careful not to overcrowd. **You may have to work in 2 batches, depending on the size of the air fryer.**
- Set the temperature to 400 degrees and the timer for 14 minutes. At the halfway mark, shake the basket of the air fryer and continue to cook until the potatoes are crispy on the outside and soft on the inside.
- Remove the basket of the air fryer and place the potatoes in a serving bowl. Taste and adjust the seasoning with salt and pepper if desired. Sprinkle with chopped chives and serve.
