Air Fryer Fried Rice is made with white rice, scrambled eggs, and frozen vegetables seasoned with soy sauce, garlic, and sesame oil, cooked together in an air fryer.
Ingredients
▢ 2 cups long-grain white rice, cooked and cooled
▢ 2 large eggs, scrambled
▢ ½ cup frozen vegetables, carrots and peas
▢ ½ teaspoon lemon juice
▢ 1 tablespoon soy sauce
▢ ½ teaspoon garlic, minced
▢ 2 tablespoons butter, melted
▢ 1 teaspoon sesame oil
▢ ¼ teaspoon kosher salt
Instructions
Spray an 8-inch round cake pan with nonstick cooking spray. (Or, if using a different kind of pan, make sure the size of the oven-safe pan you are using fits inside your air fryer.) Set aside.
In a large bowl, combine rice, scrambled eggs, vegetables, lemon juice, soy sauce, garlic, butter, sesame oil, and salt. Mix until well combined.
Transfer the mixture to the prepared cake pan (or pan you are using).
Place the bowl into the air fryer and cook at 360°F for 15 minutes, stirring every 5 minutes. Serve immediately.
How to Make Air Fryer Fried Rice
When you are ready to make this side dish, be sure that the rice has been cooked and cooled. As I stated above, this is a perfect recipe to use up leftover rice. In addition to having the rice cooked, find an oven-safe pan that fits in your air fryer. I used an 8-inch cake pan for this recipe. Spray the pan with nonstick cooking spray and set it aside.
Next, scramble the eggs. Then, add the rice, scrambled eggs, frozen vegetables (no need to thaw), lemon juice, soy sauce, garlic, butter, sesame oil, and salt to a large bowl. Mix the ingredients together to combine. Transfer the mixed ingredients to the prepared pan. Finally, cook the rice mixture in the air fryer at 360°F for 15 minutes, stirring every five minutes.
Serve the fried rice immediately with a little more soy sauce (if preferred). Store leftover fried rice in a sealed container, in the refrigerator, for up to 3 days.
