Air Fryer Mexican Chicken Casserole

Air Fryer Mexican Chicken Casserole –Air Fryer Mexican Chicken Casserole is a delicious, easy recipe that will be the perfect addition to your meal rotation. With just a few ingredients and minimal prep time, you can have this dish on the table in 45 minutes! This one-pot meal is perfect for potlucks or weeknight dinners!

  • 7.5 ounces black beans, rinsed and drained
  • 12 ounces cream of chicken soup
  • 15 ounces fire-roasted tomatoes , (adds spice)
  • 6 ounces green chiles
  • 1 teaspoon cumin
  • 2 cups chicken, cooked and diced
  • 6 corn tortillas, torn into pieces (plus more for topping if not using tortilla chips)
  • 2 cups Colby-Jack cheese, shredded
  • 1/2 cup tortilla chips , crushed– for topping

Fresh tomatoes, cilantro, and/or sour cream for garnish

Instructions

  1. In a large mixing bowl, stir together black beans, cream of chicken soup, fire-roasted tomatoes, green chiles, cumin, and chicken.
  2. Choose a deep-dish casserole dish that fits in your air fryer. Spray with non-stick cooking spray.
  3. Layer ½ of the tortilla pieces in the bottom of the casserole dish.
  4. Top the tortilla layer with half of the bean and chicken mixture. Sprinkle 1 cup of cheese over the chicken mixture. Layer with the other half of the tortilla pieces, then the remaining bean and chicken mixture.
  5. Bake, covered with aluminum foil, at 350°F in the air fryer until hot and bubbly all the way through (about 45 minutes.)
  6. Remove the aluminum foil and top with remaining cheese and crushed tortilla chips or corn tortilla pieces.
  7. Place the dish back into the air fryer and continue cooking until cheese is melted and chips are becoming a bit golden.
  8. Top with diced tomatoes, chopped cilantro, and some sour cream if desired
  9. Plate, serve, and enjoy!

Notes

  • This is a deep-dish casserole and hence, takes some time to heat all the way through. If you’d like to speed things up, you can heat the filling mixture before assembling the casserole. Everything is pre-cooked, but you don’t want to scoop into the casserole and have the center still be cold! It took 45 minutes for my air fryer to heat through.
  • Use rotisserie chicken or leftover chicken. You can also cook a couple of chicken breasts in the air fryer and shred those to add. The chicken needs to be cooked all the way through before being added to the casserole mix.
  • You could substitute tortilla chips for all of the tortillas in the dish – layers and all! Just crush a bunch of chips and spread a nice layer across the bottom of both the first and second layers.
  • This dish is spicy and cheesy and creamy. Absolutely delicious. If you want a milder dish, use regular diced tomatoes instead of the fire-roasted tomatoes and cut back on the green chiles.
