Beef albondigas with carrots and potatoes

Saute (1) tomato, 1/2 white onion and (4) minced garlic. Until translucent. Then add chopped mint, cilantro, dried oregano, pepper and fill with water. Bring to a boil and season with tomato chicken bullion. Boil for 5mins before adding meatballs.

Meatballs:
1lb of ground beef add chopped cilantro, mint (yerba buena) finely chopped onion, minced garlic, diced tomato, 1/2cup brown rice and egg white (Himalayan salt and pepper to taste) roll and add to broth. Do not stir, so meatballs stay intact.
Bring to a rapid boil, cover and lower heat. Add desired veggies (added carrots and red potatoes) Cook for 45mins or more until rice is cooked and veggies are tender. The longer the better ☺
