Simple cheese and onion enchiladas. Ok folks, the enchilada gravy is an old family recipe. I’ll give you the basics. Make it your own. Enjoy Recipe: Homemade enchilada gravy or favorite canned/bottled sauce Corn tortillas Shredded cheddar cheese Fresh diced white onion Gravy – I make a simple roux, flour and vegetable oil. Cook until desired color. Add homemade chicken stock. Enough for desired consistency. I add chili powder and spices. Sometimes I add shredded cheddar cheese. There you have it Dip tortillas in enchilada gravy/sauce. Add to hot frying pan with enough oil to cover the bottom. Fry on each side for a minute or two. Place on oven safe dish/plate. Sprinkle cheese and onion, roll. Continue until all desired amount of tortillas are fried and rolled. Top with additional sauce, cheese and onions. Broil until cheese is melted. Serve hot.
