Chicken Enchilada Soup.
Made in a slow cooker. Chicken can be frozen or thawed it comes out the same in the end. I do it in a slow cooker on high for 3 hours. Then I shred the chicken and do 2 more hours on low.
6 chicken breast
1.5 can enchilada sauce
28oz diced tomato
2 cans black beans
2 cans corn
2.5 cup chicken broth
12 tortillas
3 tsp cumin
3 tap chili powder
1 onion
Cilantro
1/4 cup lime juice
