Directions:
Sauté onion and put aside
Cook ground beef along with rotel and minced garlic, put aside
Place chunky diced potatoes to boil in water (sprinkle a pinch of salt). Cook on rapid-simmer for 7-10 min
Meanwhile, fry vermicelli, until golden brown. (make sure to continuously stir to avoid over cooking. I like to get it pretty golden- when I see a few dark brown strings showing up, that’s perfect). Add broth, tomato sauce, all dry spices, and sautéed onions. Mix well
Add ground beef and “almost” cooked potatoes to vermicelli mix, simmer another 5 min. Don’t overcook! Move away from heat and allow to cool for 5 min .
