Brewing and eating beets give you the same health benefits. On the other hand, fermented beets are more bioavailable through fermentation and also provide healthy bacteria and enzymes through fermentation.

Besides canned beets and sauerkraut filled with beets, fermented beet juice, known as Kvass, is growing in popularity in the West.
Kvass is widely used in Russia, Ukraine and other countries of Eastern Europe, where it is used medicinally as a health tonic. It is often added to soups, sauces and broths.

Historically, Kvass has been used to boost immune function, cleanse the blood, fight fatigue, and treat kidney stones, chemical sensitivity, allergies, and digestive problems. Anecdotal reports suggest that Kvass may even reduce age spots, thicken hair, and reduce graying of hair.

Recent animal research confirms the gastrointestinal benefits of fermented beetroot juice with milk and improves the intestinal flora and metabolic activity.

Because of its detoxifying properties, avoid drinking too much at first. This can increase the secretion of toxins, leading to symptoms of bloating, constipation, cold or flu.

In general, it is recommended to start with 30 grams per day and then gradually increase the amount of 1 cup to 30 grams per day. If you are sensitive to toxins, you should start with just a tablespoon.
