Carne Guisada
This is a recipe my mom passed down to me. My mom never measured anything but I’m attempting to get measurements so you can enjoy!
2-3 lbs of round steak. I’ve also used chuck roast, cubed into small chunks
1 med onion chopped
1 fresh poblano pepper chopped
2 cloves garlic minced.
2-3 tbsp flour
1 tsp cumin
2-3 tbsp of tomato sauce
I beef bullion cube
About 2 – 2 1/2 cups of water
Salt and pepper to taste
I seared the meat first in a hot pan with bacon fat. Then added onion,poblano and garlic, salt and pepper. After the veggies browned I added flour . Let the flour brown a bit then added cumin and tomato sauce. Let the sauce and cumin char a bit. Added water and beef bouillon cube. Scrap the bottom of pan to get all the seasoning off and into the sauce. Cover with lid. Simmer for at least 1 1/2- 2 hours stirring occasionally. If gravy gets too thick add more water while cooking.
