FRIJOLES PUERCOS


Ingredients:
2 lbs of freshly cooked Pinto beans (4 cups) ⚠️
1 1/2 lbs of chorizo (I use Reynaldo’s brand from our local El Super creamery section)
1 lb of whole Cotija cheese (i cut mine into cubes)
6 Whole pickled jalapeños ( i use 8 but we like the heat use 1-2 just for flavor)

⚠️In the past I have substituted fresh cooked beans for 2 large canned Bush’s brand beans and it has a good taste but nothing compared to fresh.

Preparation :
Clean,wash,rinse your beans and boil with half of an onion and salt.
Fry your chorizo.
Add the beans (mash or keep whole/i only add about 2 cups of the bean broth.)
mix in your jalapeños)
Bring to a boil on low mixing and making sure it doen’t stick and burn at the bottom.
